INGREDIENTS:
- 1 cup rajma (kidney beans), soaked overnight
- 1 medium-sized turnip, peeled and chopped into small pieces
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala powder
- 2 tbsp vegetable oil
- Salt to taste
- Water as required
INSTRUCTIONS:
- Rinse and drain the soaked rajma. Add the rajma to a pressure cooker along with 4 cups of water and a pinch of salt. Pressure cook for 4-5 whistles or until the rajma is cooked through and soft.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until the onions are golden brown.
- Add ginger-garlic paste and sauté until the raw smell disappears.
- Add chopped tomatoes and cook until they are soft and mushy.
- Add coriander powder, turmeric powder, red chilli powder, and garam masala powder. Mix well and cook for 2-3 minutes.
- Add chopped turnip and cook for a minute.
- Add the cooked rajma along with the water it was cooked in. Add more water as required to get the desired consistency of the curry. Add salt to taste.
- Cover the pan with a lid and let the curry simmer on low heat for 15-20 minutes or until the turnip is cooked through and soft.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
