Kadhai Chicken Recipe
Kadhai chicken is a popular North Indian dish that is made with boneless chicken pieces cooked with onions, tomatoes, and a blend of aromatic spices in a kadhai, which is a traditional Indian wok. Here is a recipe to make Kadhai chicken:
INGREDIENTS:
- 500 grams boneless chicken, cut into small pieces
- 2 tbsp oil
- 1 tbsp ghee
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 2 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp fennel seeds
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala powder
- Salt to taste
- 1 tbsp kasuri methi
Fresh coriander leaves, chopped for garnish
INSTRUCTIONS:
- Heat oil and ghee in a kadhai or a heavy-bottomed pan.
- Add cumin seeds, coriander seeds, and fennel seeds and sauté for a few seconds until fragrant.
- Add onions and sauté until they turn translucent.
- Add ginger paste, garlic paste, and green chilies and sauté for a minute.
- Add tomatoes and cook until they turn mushy.
- Add red chili powder, turmeric powder, and garam masala powder and mix well.
- Add chicken pieces and mix well until the masala coats the chicken pieces.
- Cover the kadhai with a lid and cook on low flame for 10-12 minutes or until the chicken is cooked.
- Add kasuri methi and mix well.
- Garnish with chopped coriander leaves and serve hot with naan or rice.
