INGREDIENTS:
- 2 cups basmati rice
- 4 cups water
- 1 lb boneless chicken thighs, cut into small pieces
- 1/2 cup plain yogurt
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 tomato, chopped
- 2 bay leaves
- 4 cardamom pods
- 2 cinnamon sticks
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- Salt to taste
- 1/4 cup vegetable oil
- 1/4 cup ghee (clarified butter)
- Handful of chopped cilantro and mint leaves
INSTRUCTIONS:
- Rinse the rice in cold water and soak for at least 30 minutes.
- In a pot, bring the 4 cups of water to a boil. Add the rice and salt to taste. Cook for about 10 minutes or until the rice is about 80% done. Drain and set aside.
- In a large pan, heat the oil and ghee over medium-high heat. Add the onions and sauté until golden brown.
- Add the chicken and cook for 5-7 minutes or until browned on all sides.
- Add the garlic, ginger, tomato, and spices (bay leaves, cardamom pods, cinnamon sticks, cumin seeds, coriander powder, turmeric powder, chili powder, and salt to taste). Mix well and cook for another 5 minutes.
- Reduce the heat to low and add the yogurt. Mix well and cook for 5 more minutes.
- In a separate pot, add half of the cooked rice. Then, layer the chicken mixture over the rice. Add the remaining rice on top.
- Cover the pot and cook on low heat for 20-25 minutes or until the rice is fully cooked and the chicken is tender.
